Makes: 20 Pitas
Oven: 230 °C / 450 °F
Preparation Time: 1 hour and 40 minutes
Baking Time: 8 - 10 minutes
840 g Cake flour (7 x 250 ml)
15 ml Salt (3 tsp)
25 ml Sugar (5 tsp)
10 g Anchor Instant Yeast (1 packet)
50 ml Oil (4 tbsp)
500 ml Lukewarm water (2 cups)
    Oil, to brush
  1. Mix the flour, salt and sugar together. Add the Anchor Instant Yeast and mix.
  2. Add the oil together with enough lukewarm water to form a soft dough.
  3. Knead the dough well for 10 minutes until smooth and elastic.
  4. Place the dough on a lightly floured surface, cover with greased plastic and leave to rest for 10 minutes.
  5. Knock the dough down, divide into 20 equal pieces and shape each piece into a ball. Roll out into flat rounds 5 mm thick.
  6. Place the pitas onto a floured surface, cover with greased plastic and allow to rise in a warm place until double in volume, about 15 – 20 minutes.
  7. Line, grease and preheat a baking tray. Place the risen pitas carefully onto the baking tray.
  8. Brush lightly with oil and bake in a preheated oven at 230 °C / 450 °F for                  8 – 10 minutes.
  9. Remove from the oven and wrap in glad wrap, whilst still warm, to ensure softness.
  10. Fill the pitas with a filling of your choice.
