Apple Strudel

Makes: 1 Apple Strudel
Oven: 180°C / 350°F
Preparation Time: 1 hour and 40 minutes
Baking Time: 30 minutes
240 g Cake flour (2 X 250 ml / 2 cups)
5 ml Salt (½ tsp)
5 ml Sugar (1 bsp)
30 g Margarine (2 tbsp)
10 g Anchor Instant Yeast (1 packet)
80 ml Lukewarm water ( cup)
1   Large egg (beaten)
    Egg, to brush
    Sugar, to sprinkle
    Icing sugar, to dust
385 g Pie apples (1 tin)
100 g Sugar (125 ml)
75 g Raisins (125 ml)
30 ml Lemon juice (2 tbsp)
5 ml Grated lemon rind
5 ml Cinnamon (1 tsp)
125 ml Water (½ cup)
15 ml Corn flour (1tbsp)
  1. Mix all the dry ingredients together and rub the margarine into the flour with the fingertips. Add the Anchor Instant Yeast and mix.
  2. Mix lukewarm milk and beaten egg together and add with enough lukewarm water to form a soft dough.
  3. Knead the dough well until smooth and shiny, about 10 minutes.
  4. Combine all ingredients for filling in a sauce pan and cook for 5 minutes over low heat, stirring continuously. Allow to cool.
  5. Knock the dough down and roll out into a thin rectangle, 2 mm (1/8 inch) thick. Spread the filling over the dough, leaving a space of 2.5 cm (1 inch) around the edges.
  6. Fold the edges onto the filling. Starting with the wide side, roll up the dough in folds of 10 cm (4 inches). Place onto a greased baking tray, cover with greased plastic and allow to rise in a warm place until double in volume, about 20 – 30 minutes. Make cuts 5 cm (2 inches) apart on top, with a sharp knife.
  7. Brush with egg, sprinkle with sugar and bake in a preheated oven at 180 °C / 350 °F for about 30 minutes, or until golden brown.Allow to cool slightly and dust with icing sugar.
