Apple Combs

Makes: 12 Apple combs
Oven: 180 °C / 350 °F
Preparation Time: 1 hour and 40 minutes
Baking Time: 15 - 20 minutes
240 g Cake flour (2 X 250 ml / 2 cups)
5 ml Salt (½ tsp)
5 ml Sugar (1 bsp)
30 g Margarine (2 tbsp)
10 g Anchor Instant Yeast (1 packet)
80 ml Lukewarm water ( cup)
1   Large egg (beaten)
    Egg, to brush
    Sugar, to sprinkle
    Icing sugar, to dust
385 g Pie apples (1 tin)
100 g Sugar (125 ml)
75 g Raisins (125 ml)
30 ml Lemon juice (2 tbsp)
5 ml Grated lemon rind
5 ml Cinnamon (1 tsp)
125 ml Water (½ cup)
15 ml Corn flour (1tbsp)
  1. Mix all the dry ingredients together and rub the margarine into the flour with the fingertips. Add the Anchor Instant Yeast and mix.
  2. Mix lukewarm milk and beaten egg together and add with enough lukewarm water to form a soft dough.
  3. Knead the dough well until smooth and shiny, about 10 minutes.
  4. Combine all ingredients for filling in a sauce pan and cook for 5 minutes over low heat, stirring continuously. Allow to cool.
  5. Knock the dough down and roll into a rectangle, 5 mm (1/4 inch) thick. Slice the dough into 4 equal strips.
  6. Place filling down the middle of each strip, lengthwise. Wet edges with water and fold dough in half over the filling. Seal edges with a fork.
  7. Cut the strip into 4 portions and using kitchen scissors, make three cuts on the folded side of each portion. Place onto a greased baking tray and spread the cut sections to form a comb. Cover with greased plastic and allow to rise in a warm place until double in volume, about 15 – 20 minutes.
  8. Brush with egg and bake in a preheated oven at 180 °C / 350 °F for about 15 – 20 minutes, or until golden brown. Allow to cool slightly and dust with icing sugar.
